BUTTER COOKIES

Butter cookies!! Sweet and delicious butter cookies!!  Let's make some of these with these simple steps. ^_^

Ingredients:

1 egg
1 & 1/2 sticks (3/4 cup) of butter
2 cups all-purpose flour
1 cup brown sugar
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp vanilla

Steps:

1. Pre-heat oven on 190° Celsius
2. In a large bowl, cream together butter and sugar. Add egg and vanilla.
3. In a separate bowl, whisk together flour, baking powder and salt.
4. Gently add the flour mixture on the large bowl and mix everything well.
5. Here is the fun part! Now that your cookie dough is ready, there are several ways that you can shape your cookies.

  • Form the dough into log. Wrap in a plastic wrap. Chill for around four hours. Once chilled, slice the log and place it in you baking sheets.
  • Use cookie cutter. When using cookie cutter, you need to roll the dough into a thin sheet. (It would be best if your dough is chilled too) Sprinkle flour on the thin dough then cut with cookie cutter then place the cookies in baking sheets.
  • Use cookie press. Put the dough inside the cookie press (No need to chill the dough for this). Use different templates to press the cookie dough into baking sheets. You may need to read the instructions on how to use your cookie press though. :)
  • Use piping bag. Put the dough into the piping bag. Use desired tip to create different shapes. Pipe the dough into baking sheets.
  • Use you hands. Put a spoonful of dough in your hands and form into small balls. Place on baking sheets and press the top of the ball to flatten.

6. Now place the cookies in the oven and bake for 12 to 15 minutes or until the sides turn a bit golden. Allow to cool for a few minutes then transfer to racks to let it cool completely.

BRAZO DE MERCEDES CUPCAKE RECIPE

Brazo de Mercedes is a well loved dessert the we enjoy. It is one of my favorites!! Then a friend told me that these can be served in cupcake form. So I researched on how to make one. It wasn't that easy for an amateur like me. haha! But it was fun!! ^_^

Ingredients

For the Meringue:
10 egg whites
1 teaspoon Cream of Tartar
1 teaspoon Vanilla Extract
1 cup Confectioner's Sugar

For the Filling:
10 egg yolks
1 can (300ml) of Condensed Milk

1. Pour the condensed milk in a heated pan. Gradually add the egg yolks and whisk continuously until the mixture's consistency is good enough for piping. Let it cool.

2. Pre-heat oven on 175° Celsius while preparing the meringue.

3. Add cream of tartar into the egg whites and mix with an electric mixer. Then gradually add sugar while mixing. Add vanilla extract. Keep mixing until he mixture is stiff.

4. Place the meringue mixture in a piping bag and pipe it on each cupcake liner leaving a hole in the center.
(Sorry, I wasn't able to take a picture as my hands are so messy. I'm bad at piping T_T )

5. Bake for 7-10 minutes or until the top is already brownish in color.

6. Let it cool for 10-50 minutes then pipe the filling into the center. Dust with confectioner's sugar on top.

Weeeh!! That's it! So far, my mom liked it so I'm happy with the result. Hahaha!!

Anyways, here are some tips. Learn from my mistakes.

1. Don't use paper cupcake liner. Use liners that can stand on its own.
2. After preparing the meringue, pipe it immediately on the liners.
3. Whisk the filling from time to time while it is cooling down.

This recipe makes 12 cupcakes. Go on and indulge to this sweet treat! See yah!

CHOCOLATE CRINKLES SIMPLE RECIPE

Chocolate Crinkles are very common sweets that you can find on your local bakeries. But you can definitely make them a lot more special if you'll bake it yourself to match your taste.

I am an amateur baker and I have tried baking chocolate crinkles using different ingredients. It's like experimenting on which products will work best for my taste.

So here is the recipe and the ingredients that I use for these chocolate crinkles. It's quite easy to do and I know those with sweet tooth will love this :)

I used ingredients that you can actually find on groceries, except for the confectioner's sugar which I bought at Sweet Craft . Though I did try using some of those that can be bought on baking stores. Yet, I feel happier with the result when I used the ones from the grocery.

Ingredients:

1 & 3/4 cup of all purpose flour [Maya All Purpose Flour]
1/4 cup & 2 tbsp of cocoa powder [Ricoa sweetened cocoa powder]
1/2 tsp of baking powder [Calumet]
200g of chopped chocolates [Dutche Dark Premium Chocolate bar]
1 stick of butter [Dari Creme Classic butter]
1/2 cup of confectioner's sugar [Peotraco Confectioner's Sugar]
1 tsp vanilla extract [McCormick Vanilla Extract]
3 eggs
a pinch of salt

1 & 1/2 cup of confectioner's sugar, for coating

Steps:

1. Sift the flour, cocoa powder, baking powder and salt in a large bowl. Mix well and set aside.
2. Melt the chocolate and the butter together. Stir them frequently until well melted. Remove from heat.
3. Add the sugar in the chocolate mixture until totally dissolved.
4. Beat the eggs one at a time on the chocolate mixture.
5. Gradually pour and stir the chocolate mixture on the dry ingredients (see step 1).
6. Soft dough will be formed. Chill this inside the fridge for 1 hour.
7. Pre-heat oven on 160 degrees Celsius and line a large baking sheet with parchment paper.
8. Place the confectioner's sugar in a small, deep bowl.
9. Scoop the dough into small balls. Use either a teaspoon or an ice-cream scoop. Roll between your palm.
10. Drop the balls into the sugar until heavily coated.
11. Place the balls in the baking sheets for about 1 and 1/2 inch apart.
12. Bake for 10 -15 minutes or until the top feels a bit firm when touched with a fingertip.
13. Leave in the baking sheets for about 2-3 minutes for these to finish baking.
14. Transfer to wire rack and leave to cool completely

This recipe makes around 40 pieces of chocolate crinkles depending on how small you'll scoop them.

That's it! It's now time to enjoy your chocolaty chocolate crinkles!
