Brazo de Mercedes is a well loved dessert the we enjoy. It is one of my favorites!! Then a friend told me that these can be served in cupcake form. So I researched on how to make one. It wasn't that easy for an amateur like me. haha! But it was fun!! ^_^
For the Meringue:
10 egg whites
1 teaspoon Cream of Tartar
1 teaspoon Vanilla Extract
1 cup Confectioner's Sugar
For the Filling:
10 egg yolks
1 can (300ml) of Condensed Milk

1. Pour the condensed milk in a heated pan. Gradually add the egg yolks and whisk continuously until the mixture's consistency is good enough for piping. Let it cool.
2. Pre-heat oven on 175° Celsius while preparing the meringue.
3. Add cream of tartar into the egg whites and mix with an electric mixer. Then gradually add sugar while mixing. Add vanilla extract. Keep mixing until he mixture is stiff.
4. Place the meringue mixture in a piping bag and pipe it on each cupcake liner leaving a hole in the center.
(Sorry, I wasn't able to take a picture as my hands are so messy. I'm bad at piping T_T )
5. Bake for 7-10 minutes or until the top is already brownish in color.
6. Let it cool for 10-50 minutes then pipe the filling into the center. Dust with confectioner's sugar on top.
Weeeh!! That's it! So far, my mom liked it so I'm happy with the result. Hahaha!!
Anyways, here are some tips. Learn from my mistakes.
1. Don't use paper cupcake liner. Use liners that can stand on its own.
2. After preparing the meringue, pipe it immediately on the liners.
3. Whisk the filling from time to time while it is cooling down.
This recipe makes 12 cupcakes. Go on and indulge to this sweet treat! See yah!
